Strawberry Brie Bruchetta

I had this recipe laying in wait on my pinterest board for quite some time – my dear boyfriend can’t eat dairy – so I was quite excited to have a ladies night opportunity to make it. The recipes I’ve found suggested goats cheese, but sometimes that can be an acquired taste and I love brie – so I adapted it to my own tastesstrawberry brie bruchetta

As you get to know me better – you’ll know I love things that are easy yet impressive: this recipe is no diffierent!

What you’ll need for 20 bruchetta

  • white baguette – cut into rounds
  • brie cheese – cut into small triangles
  • punnet of strawberries – diced
  • quarter cup of basil (a hand full of leaves) – diced
  • quarter cup of red onion – finely chopped
  • balsamic vinegar 2 tbsp
  • balsamic vinegar reduction tsp (and some  extra for drizzle)
  • fresh ground pepper – 1 tbsp

If you’re travelling – save cutting the baguette & brie until you get to your destination

Instructions:

  • mix last six ingredients into a bowl and let sit in the fridge for an hour
  • toast baguette rounds on a baking sheet in a 350 degree oven (approx 5 mins), don’t let them get too toasty, you don’t want them so hard that they hurt the roof of your mouth!
  • flip the rounds over and put a small slice of brie on each (you really don’t need much as it will melt!)
  • pop them back in the oven for a few minutes until the brie melts
  • pull them out, and with a spoon push the strawberry mixture onto the melted cheese – it will help keep all the yummy bits on
  • place on a platter and drizzle with balsamic reduction
  • accept praise
